A creamy and satisfying smashed chickpea salad made with chickpeas, vegan mayo, red onion, celery, pickles, and seasonings. Perfect for sandwiches, wraps, meal prep, and quick plant-based meals.

Ingredients

  • 1 (15 oz.) can of chickpeas (1.5 cups)
  • 2 stalks of celery
  • 1/2 small red onion
  • 2-3 pickles/gherkins
  • 1 tsp mustard
  • 2 tbsp vegan mayo
  • 1.5 tbsp soy sauce or tamari
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp nutritional yeast
  • 1 tsp white wine vinegar (or other mild vinegar)

Instructions

  1. Mash the chickpeas with a potato masher or fork in a bowl
  2. Cut celery into thin half moons. Finely dice the onion. Cut the pickles into thin rounds. Add everything to your bowl.
  3. Add the rest of the ingredients and mix well.
  4. Store in the fridge to use later or enjoy right away.
