Sweet & Spicy Coconut Sweet Potato Mash

This spicy coconut sweet potato mash is creamy, slightly sweet, and perfectly balanced with warm spices and a hint of lime. An easy one-pot vegan side dish packed with flavor and vibrant color. 

Ingredients

  • 1 tbsp coconut oil
  • 1 garlic clove, minced
  • 2 cm/1 inch piece fresh ginger, minced
  • 2 medium sweet potatoes, or 625 g*
  • 200 ml coconut milk (about 3/4 cup + 2 tbsp)
  • 75 – 100 ml water (1/3 – 1/2 cup)
  • pinch to 1/4 teaspoon of spicy chili powder
  • 1/2 tsp cinnamon
  • 1/8 tsp turmeric
  • 1/2 tsp salt or to taste
  • freshly ground pepper
  • 2 tbsp fresh lime juice (juice of 1/2 lime)
  • 1 tsp maple syrup

Instructions

  1. Peel the sweet potatoes and cut them into pieces of about 1.5 cm (about 0.6 inches)
  2. Heat the oil in a pot, add ginger and garlic. Sautée on low heat for about 30 seconds before adding the sweet potatoes. 
  3. Add coconut milk and water. Start with 75 ml or 1/3 cup of water. It’s fine if the sweet potatoes aren’t totally covered in water, but if the liquid is very low, add the extra water.
  4. Bring to a boil, then turn the heat on low and put the lid back on. Let simmer for about 30 minutes, stirring from time to time to make sure all the sweet potatoes are cooked thoroughly. Once the sweet potatoes are tender, turn off the heat. 
  5. Add chili powder, cinnamon, turmeric, salt, peppers, lime juice, and maple syrup. Mix well with a potato masher. 
  6. Taste for salt and spices and enjoy!

Notes

* weigh the sweet potatoes for best results, as sweet potatoes can vary in size quite a bit
