Ingredients

For the blended chocolate chia pudding

  • 1/3 cup chia seeds
  • 1 cup nondairy milk
  • 2 dates or up to 2 tbsp maple syrup
  • 1 tbsp cocoa powder
  • 1 tbsp almond butter (or sub peanut butter)
  • pinch of salt

For the peanut butter caramel

  • 1 tbsp peanut butter (any kind)
  • 1/2-1 tbsp date syrup, to taste
  • 1-3 tbsp nondairy milk, to taste (depending on how runny your peanut butter is, you’ll need more or less)

To serve:

  • raspberries, fresh or thawed from frozen
  • choc chips, to taste

Instructions

  1. Make the blended chocolate chia pudding by blending all of the ingredients in a high-speed blender until smooth. Put in the fridge for a few hours so it can firm up.
  2. Make the peanut butter caramel by simply mixing all ingredients in a small bowl until smooth.
  3. Layer your parfait starting with a few tablespoons of blended chocolate chia pudding, berries, more chia pudding and berries. Drizzle with the peanut butter caramel and sprinkle on some vegan chocolate chips for good measure. Serve right away or store in the fridge for later.
