Soft and chewy vegan tahini blondies packed with chocolate chips and crunchy pecans. An easy, rich and delicious dessert that’s perfect for sharing.

Ingredients

  • 1/4 cup vegan butter, melted
  • 1/2 cup runny tahini
  • 1/3 cup raw cane sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup plant-based milk (like soy)
  • 1/2 tsp baking powder
  • 3/4 cup all-purpose flour
  • 1/8 cup pecans, chopped
  • 1/8 cup choc chips or chopped vegan dark chocolate
  • flaky sea salt

Instructions

  1. Pre-heat the oven to 180°C/350° F.
  2. Melt the vegan butter, then mix in tahini, sugar, maple syrup, vanilla extract, and salt. Mix well, then add nondairy milk and mix again.
  3. Add baking powder and flour. Fold in, but don’t overmix.
  4. Add chopped pecans and choc chips.
  5. Transfer the mixture into a lightly greased oven-safe dish of about 8×8 inch/20×20 cm.
  6. Sprinkle with some sea salt flakes.
  7. Bake for about 20 minutes, checking after 17 or 18. Take the blondies out before they get too firm, then let cool completely.
  8. Store in the fridge for a few hours until they’re nice and fudgy.
