A creamy chocolate chia pudding made with chia seeds, cocoa powder, plant-based milk, a touch of sweetness, and almond butter. It’s an easy make-ahead breakfast or snack that’s rich, satisfying, and naturally dairy-free.

Ingredients

  • 1/3 cup chia seeds
  • 1 cup nondairy milk
  • 2 dates or up to 2 tbsp maple syrup
  • 1 tbsp cocoa powder
  • 1 tbsp almond butter (or any nut butter you like)
  • pinch of salt

Instructions

  1. If using dates, blend those up in a high-speed blender with the nondairy milk. If you want your whole chia pudding to be blended, chuck the rest of the ingredients in there as well.
  2. For a traditional chia pudding texture, add the blended date/nondairy milk mixture to the rest of the ingredients and mix well.
  3. If using maple syrup, there’s no need to blend – just mix it all together in a bowl.
  4. Mix thoroughly and again after a minute or so to prevent bigger clumps of chia.
  5. Let set in the fridge for a few hours or overnight.
