Chocolate Chia Pudding

chocolate chia pudding

Chocolate chia pudding is a simple breakfast or snack made by soaking chia seeds until they thicken naturally. In this version, cocoa powder and a small amount of sweetener are added for a rich chocolate flavor. Almond butter makes it extra creamy and satisfying.

Chia seeds absorb several times their weight in liquid. After a few hours in the fridge, they create a thick, pudding-like texture without any cooking. This makes the recipe very practical for busy mornings. You can prepare it the night before and have breakfast ready the next day.

From a nutritional perspective, chia seeds are especially interesting because they are rich in fiber and contain plant-based omega-3 fatty acids. The main omega-3 found in chia seeds is ALA (alpha-linolenic acid). ALA is considered a precursor to other omega-3 fatty acids such as EPA and DHA, which are commonly found in fatty fish.

The body can convert ALA into EPA and DHA, although only in limited amounts – and the rates seem to vary from person to person. Still, including ALA-rich foods like chia seeds, hemp seeds, or flax seeds in your diet regularly can contribute to your overall omega-3 intake, especially if you follow a plant-based diet.

Toppings that go well with this chocolate chia pudding

In addition to healthy fats, chia seeds provide fiber that helps support digestion and keeps you feeling full for longer. When combined with plant-based milk and almond butter, this pudding offers a balanced mix of carbohydrates, fats, and a small amount of protein. It’s naturally dairy-free and vegan, if you use a plant-based milk alternative.

This chocolate chia pudding works well on its own, but it’s also very versatile:

  • You can top it with fresh fruit like banana slices, berries, or chopped pear.
  • Add some nut butter, coconut flakes, cacao nibs, or granola for more richness, crunch, and texture.
  • If you prefer it slightly sweeter, a drizzle of maple syrup or a few chocolate chips are amazing, too!

It also makes a good base for layered breakfasts. You can use it as part of a parfait like my Blended Chocolate Chia Pudding Parfait, where the chocolate layer adds depth and contrasts nicely with tangy berries and a scrumptious peanut butter caramel sauce.

When making this chocolate chia pudding, you have two options: Just mix everything together for a traditional chia pudding version. Or blend everything up if you prefer that texture. The ratios work well for both approaches.

Because the chocolate chia pudding keeps well in the fridge for several days, it’s ideal for meal prep. Portion it into small jars and take it with you as a snack during the day.

Overall, this chocolate chia pudding is an easy recipe made with basic ingredients. It requires minimal effort, can be prepared in advance, and provides steady energy, making it suitable as both a healthy breakfast and a satisfying snack.

  • Author: Franni
  • Prep Time: 5
  • Total Time: 5 minutes
  • Yield: 1-2 portions
  • Diet: Vegan, Vegetarian

Ingredients

  • 1/3 cup chia seeds
  • 1 cup nondairy milk
  • 2 dates or up to 2 tbsp maple syrup
  • 1 tbsp cocoa powder
  • 1 tbsp almond butter (or any nut butter you like)
  • pinch of salt

Instructions

  1. If using dates, blend those up in a high-speed blender with the nondairy milk. If you want your whole chia pudding to be blended, chuck the rest of the ingredients in there as well.
  2. For a traditional chia pudding texture, add the blended date/nondairy milk mixture to the rest of the ingredients and mix well.
  3. If using maple syrup, there’s no need to blend – just mix it all together in a bowl.
  4. Mix thoroughly and again after a minute or so to prevent bigger clumps of chia.
  5. Let set in the fridge for a few hours or overnight.
