Vegan Blended Chocolate Chia Pudding Parfait

I’ve been obsessed with this ultra-dreamy vegan blended chocolate chia pudding parfait lately. It consists of three main components:
- blended chocolate chia pudding
- raspberries
- and a luxurious peanut butter caramel made with date syrup
These layers create a perfect balance between rich and creamy, slightly sweet and fresh. The base of this blended chocolate chia pudding parfait is a chocolate chia pudding that’s blended rather than leaving the chia seeds whole.
Of course, that part is totally optional – you could also leave them as is to save time or if you prefer the texture. If you choose to blend the chia seeds, it creates a smooth, thick cream that feels a lot more indulgent. It still comes with all the benefits of chia pudding, like lots of fiber, plant-based protein and healthy fats. Chia seeds also provide ample amounts of ALA, alpha-linolenic acid, a precursor to omega-3 fatty acids.
The perfect treat for when that chocolate craving strikes
Raspberries are among my favorite berries (it’s so hard to choose as they’re all so good!). They add a fresh, slightly tart contrast to the rich chocolate and peanut butter layers. The peanut butter caramel is made with just three simple ingredients: peanut butter (duh), date syrup, and nondairy milk. I find that date syrup works really well, but don’t sweat it – you can totally use maple syrup or agave.
Add to that a sprinkle of vegan chocolate chips and you have yourself a creamy, dreamy, fruity dessert. It’s perfect as a healthier snack or breakfast that keeps you feeling full for hours.
My blended chocolate chia pudding parfait is flexible, too. If you have the time, let the chia pudding sit in the fridge for a few hours or overnight. During that time, the chia pudding will thicken. If you don’t feel like waiting, no worries – you can absolutely eat it right away. The consistency will just be softer and more like a dessert cream.
This vegan parfait is one of those recipes that feels like a special treat without actually requiring a lot of effort or time in the kitchen. Perfect as a meal prep option for busy mornings, an afternoon pick-me-up or just a little something when that chocolate craving strikes.

Ingredients
For the blended chocolate chia pudding:
- 1/3 cup chia seeds
- 1 cup nondairy milk
- 2 dates or up to 2 tbsp maple syrup
- 1 tbsp cocoa powder
- 1 tbsp almond butter (or sub peanut butter)
- pinch of salt
For the peanut butter caramel:
- 1 tbsp peanut butter (any kind)
- 1/2-1 tbsp date syrup, to taste
- 1-3 tbsp nondairy milk, to taste (depending on how runny your peanut butter is, you’ll need more or less)
To serve:
- raspberries, fresh or thawed from frozen
- choc chips, to taste
Instructions
- Make the blended chocolate chia pudding by blending all of the ingredients in a high-speed blender until smooth. Put in the fridge for a few hours so it can firm up.
- Make the peanut butter caramel by simply mixing all ingredients in a small bowl until smooth.
- Layer your parfait starting with a few tablespoons of blended chocolate chia pudding, berries, more chia pudding and berries. Drizzle with the peanut butter caramel and sprinkle on some vegan chocolate chips for good measure. Serve right away or store in the fridge for later.
