Coffee Smoothie

Do you love coffee? Then this Coffee Smoothie might be the perfect quick breakfast or afternoon pick-me-up for you. It’s creamy, naturally sweet, and has that bold and mellow coffee flavor.

Now, I’m no coffee fiend. I usually drink way more tea than coffee, though I have recently started to make myself an after-lunch cappuccino and really love that. Apart from that, however, I generally prefer tea. That’s not to say that I don’t like coffee as a flavor. I really like it in sweets and baked goods. One of my favorite chocolates as a child was a white chocolate coffee kind of chocolate that sadly isn’t vegan. Coffee liqueur used to be one of my favorites (back when I still drank alcohol, which as a nursing mother, I don’t right now).

Anyway, back to this coffee smoothie and why I hope you’ll love it as much as I do: Frozen banana chunks provide sweetness. They also give the smoothie its super smooth and creamy texture. Add to that some nut butter for more richness. I especially love using hazelnut butter because it adds a deliciously nutty flavor and gives the smoothie a subtle chocolate-hazelnut vibe. If you can’t get your hands on that or simply don’t like it, no worries–peanut, almond, or cashew butter work just as well.

For the coffee part, instant coffee is the easiest option because you can add it directly to the blender. If you prefer espresso or don’t have instant coffee granules in the house, a single shot will do. You can let that cool down for a minute or two, if you have the time.

This coffee smoothie comes together super quickly and with no fuss at all. Just add everything to your blender and blend until smooth and creamy. In just a few minutes, you have an easy breakfast or delicious afternoon snack.

For a caffeine-free version, simply swap the coffee for decaf. This can be a good idea later in the day or if you’re sensitive to caffeine. No matter which version you use, make sure that you use coffee granules that taste great for maximum flavor.

Ingredients

  • 1.5 cups plant-based milk of choice (like soy)
  • 2 bananas, frozen in chunks
  • 1 tbsp instant coffee granules or 1 shot espresso
  • 1 tbsp flaxseed
  • 1 tbsp chia seeds
  • 1.5 tbsp hazelnut butter (or nut butter of choice)
  • 1 date
  • 1/4 tsp cinnamon powder
