Now, if you’re making granola, you’re probably going for that perfect crunch. To achieve that, it’s important to spread the granola mixture out in an even layer on the baking sheet. Don’t make the layer too thick and don’t leave too much space between the oats.
If you want big clusters of granola, press the mixture down slightly before baking. Don’t stir too much–or not at all–during baking.
Bake your granola until it’s turning a light golden color. This means it’s getting crispy. From here, it really is up to you. Personally, I don’t like it too crispy, so I take it out after around 20 minutes in the oven. If maximum crunch is what you’re after, leave it for a few minutes longer. Remember that the texture of the granola will change even after you’ve turned off the oven and taken it out–it will get firmer.
Let the granola cool completely on the baking sheet before breaking it apart for storage. Only store it after it has cooled completely. Otherwise, it can still be a little moist and that might mean it loses its crunch.
If the granola has gotten a little softer in your storage container after a few days, you can crisp it up in the oven or air-fryer. Just make sure to cool it completely again. The only caveat: If you’ve added your choc chips, those will melt.

Ingredients
- 2 cups rolled oats
- 1 tbsp chia seeds
- 1/8 cup maple syrup, or to taste
- 2 tbsp neutral-tasting oil, such as canola
- 2 tbsp peanut butter
- 1 tsp vanilla extract
- pinch of salt
- 1/4 tsp cinnamon, optional
- vegan choc chips, to taste
Instructions
- Preheat the oven to 160° Celsius (320° Fahrenheit).
- In a bowl, mix all of the ingredients except for the chocolate chips. If it seems very dry, add a tablespoon or so of water.
- Spread the granola out on baking parchment on a baking sheet.
- Bake for about 20 minutes. You can flip the granola halfway if you remember it, but it’s no big deal if you don’t.
- Take it out of the oven and let cool. Try not to break up the granola in this time if you like big clumps.
- Add the chocolate chips and mix well before storing in an airtight container at room temperature.
