Blueberry Nice Cream

I love nice cream. I mean, what’s not to love? You can make it at home in minutes in whatever flavor variation your little heart desires. It’s definitely way healthier than store-bought ice cream with all its additives. And honestly? I prefer the taste and consistency as well. The texture of nice cream is so velvety and smooth. It feels so much lighter than regular ice cream.

I also love blueberries, so this Blueberry Nice Cream really is a winner for me. And it only needs four simple ingredients which I pretty much always have at home.

Tips For Making Creamy Nice Cream

The most important thing is to freeze your bananas properly. I like to freeze them in chunks, as this will be much easier for your blender. Never use whole bananas or you might ruin your blender. And it’ll take forever, too. If you freeze banana in slices or chunks, they will take anywhere from 3 to 5 hours to be frozen solid. If you want to make sure, freeze them overnight. Or simply have a stash of frozen bananas on hand at all times, so you’re good to go when the craving strikes.

If your frozen banana pieces are completely rock solid, let them sit at room temperature for 5–10 minutes before blending. This makes it easier to blend up the nice cream. You won’t have to use the tamper as much and it will be ready more quickly.

Speaking of blenders, a high-speed blender really does make this much easier. I use my Vitamix for this because the mixture gets very thick while blending. You may need to stop once or twice and scrape down the sides before everything turns smooth and creamy. If you have one, use your tamper!

I like my nice cream to be somewhat “liquid”. If you don’t, I recommend adding the plant-based milk gradually. You only need a little to get the blender going. Adding too much will make the nice cream more liquid than you might want.

Once it’s blended, you can eat it straight away for that soft-serve consistency. If you prefer it a little firmer, simply put it in the freezer for another 30–60 minutes.

Topping Ideas

Honestly, you can top this nice cream with pretty much anything you like. Extra blueberries are an obvious choice and add a nice fresh bite.

I particularly love some crunchy granola or puffed quinoa on top. Chocolate chips are another favorite, especially if you like the combination of blueberries and chocolate.

You could also add chopped almonds, coconut flakes, cacao nibs, or a generous drizzle of almond butter. Or keep it really simple and just add some fresh berries.

Ingredients

  • 2 bananas, frozen in chunks
  • 1/2 cup frozen blueberries (I love wild blueberries)
  • 1 tsp almond butter
  • 2 tbsp plant-based milk of choice
  • 1/2 tsp vanilla extract, optional 

Instructions

  1. Make sure your bananas are nice and frozen. They should be rock solid, which may take anywhere from 3 to 5 hours. 
  2. Add all the ingredients to your blender. Wait 5 minutes if you want your blueberry nice cream to blend more easily.
  3. Blend, starting on low speed and gradually increasing the speed, until creamy. Use your tamper, if you have one. If you don’t, you may have to stop the blender to scrape down the sides. 
  4. Eat right away with your favorite toppings or freeze for 30 to 60 minutes for a more solid consistency.
