Sweet & Spicy Coconut Sweet Potato Mash

Don’t get me wrong: Mashed potatoes are great. But sometimes it’s nice to switch things up a bit.
This spicy coconut sweet potato mash is one of those recipes that feels familiar, but hits a little different. It’s creamy, a little sweet, a little spicy, and so satisfying.
Simple ingredients, big flavor
The base is simple: sweet potatoes and coconut milk. That already gives you a naturally creamy and slightly sweet mash. No need for butter or regular milk here.
What makes this recipe truly special are the spices. Ginger and garlic add a warm, savory base. Then there’s chili, cinnamon, and turmeric. Not too much, just enough to give it some depth. A little lime juice at the end brings everything together and balances the sweetness.
One-pot and easy to make
The whole dish cooks in one pot. That’s one of the best parts. And it’s so simple to make:
- First, you heat some oil and lightly cook the ginger and garlic.
- Then you add the sweet potatoes, coconut milk, and a bit of water.
- You then let it simmer until the potatoes are soft, stirring every now and then so nothing sticks to the bottom.
At first, it might look like there’s not enough liquid. That’s fine! The potatoes shrink as they cook, and the liquid expands. So don’t worry–just keep stirring and give it time. If it feels like there’s too much liquid at the end, you can always drain a little before mashing.
Final step: mash and adjust
Once the sweet potatoes are soft, add the spices, lime juice, and a bit of maple syrup. Then you mash everything together until smooth. Final step: Taste and adjust for salt or spices if needed.
You can keep it slightly chunky or make it super smooth – both versions work beautifully.
How to serve
This mash goes really well with roasted vegetables or baked tofu. It also works great as part of a bigger bowl with grains and greens.

Ingredients
- 1 tbsp coconut oil
- 1 garlic clove, minced
- 2 cm/1 inch piece fresh ginger, minced
- 2 medium sweet potatoes, or 625 g*
- 200 ml coconut milk (about 3/4 cup + 2 tbsp)
- 75 – 100 ml water (1/3 – 1/2 cup)
- pinch to 1/4 teaspoon of spicy chili powder
- 1/2 tsp cinnamon
- 1/8 tsp turmeric
- 1/2 tsp salt or to taste
- freshly ground pepper
- 2 tbsp fresh lime juice (juice of 1/2 lime)
- 1 tsp maple syrup
Instructions
- Peel the sweet potatoes and cut them into pieces of about 1.5 cm (about 0.6 inches)
- Heat the oil in a pot, add ginger and garlic. Sautée on low heat for about 30 seconds before adding the sweet potatoes.
- Add coconut milk and water. Start with 75 ml or 1/3 cup of water. It’s fine if the sweet potatoes aren’t totally covered in water, but if the liquid is very low, add the extra water.
- Bring to a boil, then turn the heat on low and put the lid back on. Let simmer for about 30 minutes, stirring from time to time to make sure all the sweet potatoes are cooked thoroughly. Once the sweet potatoes are tender, turn off the heat.
- Add chili powder, cinnamon, turmeric, salt, peppers, lime juice, and maple syrup. Mix well with a potato masher.
- Taste for salt and spices and enjoy!
