Greek Chickpea Salad
This Greek chickpea salad is one of those recipes I keep coming back to. It’s quick, fresh and filling without feeling heavy. Everything comes together in one big bowl, and there’s no cooking involved. If you already have a can of chickpeas in the pantry and some basic veg in the fridge, you’re almost ready to go.
I especially love making this salad during summer. It’s crisp, refreshing and perfect when it’s too warm to turn on the oven. But honestly, I make it throughout the year. It works just as well for an easy lunch as it does for dinner, and leftovers taste just as good the next day.
The combination of crunchy lettuce, cucumber, juicy cherry tomatoes, red onion, tangy olives and creamy vegan feta never gets boring. The chickpeas add plenty of texture and make the salad satisfying enough to enjoy as a main meal. Everything gets tossed with a simple balsamic dressing that ties it all together. It really couldn’t be easier.
If you’re looking for a salad that actually keeps you full, this is a great one to try. It has plenty of plant-based protein from the chickpeas and lots of fresh vegetables in every bite. I usually make a big bowl and keep it in the fridge for quick lunches over the next day or two.
If you make this recipe, let me know what you think in the comments. I’d love to hear from you!

Why You’ll Love This Greek Chickpea Salad
There are plenty of salad recipes out there, but this one checks a lot of boxes for me. It’s quick to make, uses simple ingredients and doesn’t leave you hungry an hour later. Everything is fresh, crunchy and full of Mediterranean flavors.
It’s also very flexible. Add more vegetables, swap the vegan feta for another plant-based cheese or leave out anything you don’t like. The recipe is easy to adapt with whatever you already have at home.
Meal Prep Tips for the Best Greek Chickpea Salad
This one is perfect for meal prep! Iceberg lettuce is pretty sturdy so won’t turn into mush in the blink of an eye. You could prepare the whole thing ahead of time and then enjoy a quick, healthy dinner.
If you don’t want to prep the whole salad beforehand, just start with chopping the cucumber, cherry tomatoes, and/or onions. You could also chop the lettuce. Keep that all in the fridge until you’re good to go.
There’s really no need to prep the dressing ahead of time–it’s basically two ingredients plus a little seasoning.
Variations
There are lots of ways to change this salad.
- Add avocado for an even creamier texture.
- Toss in cooked quinoa for an extra hearty meal.
- Replace the chickpeas with butter beans or white beans for a fun twist.
Serving Suggestions
Serve this Greek chickpea salad on its own for a quick lunch or light dinner. It’s also great with warm pita bread, a nice baguette, grilled tofu, or vegan garlic bread. It makes a delicious side dish for a barbecue and is ideal for meal prep.
FAQ
Can I make this salad ahead of time?
Yes. For the best texture, store the dressing separately and mix everything together just before serving. If you DO make it ahead with the dressing, don’t worry–the flavor will be that much more intense!
How long does it keep?
It keeps well in the fridge for about 2 days. The lettuce will soften over time, but the flavors will still be delicious.
Can I use dried chickpeas?
Absolutely. Just cook them until tender and let them cool completely before using them in the salad.
Can I leave out the vegan feta?
Of course. The salad is still delicious without it, although the vegan feta adds a nice creamy, tangy contrast to the fresh vegetables. You could also swap it for plain tofu–even better if you’ve had time to marinate that in a little olive oil and fresh lemon juice for a more tangy flavor.
